Tracey's Cafe Style Warm Kumara Salad

kumara
olive oil
1 clove of garlic
middle bacon
cashew nuts
watties 'bit on the side' oriental plum sauce
water

Roast kumara in the oven in olive oil (place un-peeled garlic clove in with kumara to roast at the same time) .

Remove the roasted garlic clove from the oven dish, peel and crush.

Fry bacon and cashew nuts in a non-stick frying pan.

Mix plum sauce (I used half the bottle of sauce) in a jug with some water and whisk in the crushed garlic clove. Add this mixture to the frying pan and heat to boil off the sauce a bit.

Stir the roasted kumara into the frying pan mixture.

Serve while still hot/warm. (Also reheats well)
