Green Peppercorn Mustard Cream Sauce

50g butter
2-3 teaspoons of mustard
1 teaspoon of green peppercorns
½ cup of cream

Preheat oven to 175ºc with a metal oven dish in it.

Heat a frying pan until very hot.
Put half the butter in the frying pan, and swirl to coat the pan.

Place peices of steak into pan, and cook for approximately 1 minute
on each side.

Place steak into the hot oven dish and place in oven.

Turn stove element down. Keep the butter and juices in the frying pan
and add the remaining butter. Place back onto the element, and when
melted and clear, add the mustard, stir until heated, add the peppercorns.

Stir and add the cream. Simmer, stirring until thickened.

Serve over the steak.
