Passionfruit Dessert

serves 4 people:

3 level Tablespoons flour
125g sugar
¼ teaspoon salt
finely grated rind of a lemon or orange
pulp of 4 ripe passionfruit
2 eggs (separated)
250 mls milk

Preheat oven 160º

Sift flour in mixing bowl with sugar, salt and lemon/orange rind.
Add passionfruit pulp and mix well.
Add egg yolks one at a time and beat well after adding each one.
Add milk and mix well.

In another bowl, beat egg whites until they form firm peaks.
Fold egg white through passionfruit mixture.

Place in large ceramic dish or divide evenly between 4 ramekins.
Place ramekins/dish in a meat dish, and fill the meat dish with warm
water, to half way up the side of your ramekins/dish.

Bake for 1 hour (if dish) or 45 minutes (if ramekins).

This dessert will have a spongey/souffle top and custard bottom.

Turn out into dessert plates and serve with icecream or cream.
