Crumbed Pasta (sounds strange but really yummy)
Large seashell pasta (cooked and drained)
1/2 cup extra virgin olive oil
1/3 cup bread crumbs
salt and pepper
cooked, finely chopped bacon
1/4 cup freshly grated parmesan cheese
1-2 Tablespoons of chopped fresh flat-leaf parsley
And add whatever else you like - I add
1 chicken breast (or 2 breast schnitzels) - cooked and diced, and a handful of washed cherry tomatoes (whole)
In large frying pan, heat the oil over medium heat. Add bread-crumbs and
salt & pepper. Stirring constantly, cook the bread crumbs
until golden brown, (about 2 minutes). Working quickly, drain the pasta and stir
it into the toasted bread crumb
mixture in the frying pan so the pasta ends up lightly coated in the crumbs. Add parmesan, stir then add all other ingredients to heat through then serve.
